Ingredients
Oil or butter to grease the pan
3eggs
1/4red pepperdiced
1/4green pepperdiced
10baby spinach leaveschopped
Handful of cheddar cheesegrated
Salt and pepper to seasonoptional
Instructions
In a bowl beat the eggs. Season with salt and pepper if required.
Grease the pan with the oil or butter and place it in the air fryer. Switch to 180C/350F and allow to heat for a minute. Add the peppers and cook for 3 minutes.
Pour the spinach and egg mix in. Sprinkle the grated cheese across the top. Cook for a further 6 minutes, checking half way through to make sure it isn’t over cooking.
