This butternut squash soup recipe is very similar to one of the recipes that Morphy Richards list in the manual that comes with their Saute and Soup Maker. It’s the soup maker I ended up choosing to buy after researching the best soup makers currently on the market.
I love butternut squash but it isn’t something that I often buy. This soup is the perfect way to have it!
I essentially followed the recipe, but I left the seeds in the chilli as I love hot and spicy food. The recipe lists fresh coriander as well but as I didn’t have any, I went ahead anyway.
It was such a simple soup to make, the longest part was peeling and chopping up the butternut squash, but it was worth it, the taste was so good. I really enjoyed using the saute feature for the butternut squash too 🙂
My husband prefers ‘chunky’ soup so I set it on the chunky setting (which is what the recipe recommends), poured his out and then used the manual blend button to whizz mine into a smooth soup.
